A storm in a bottle - less than 1000 bottles of this little bottle are made, using Sauvignon Blanc & Semillon & made using 4 different techniques (Part free-run juice, part is destemmed and fermented on skins, part whole-bunch fermented and finally, part aged in oak). What results is a wonderfully complex & driven wine - aromas of quince, sweet pear compote, green tea & ginger with buckets of salinity to boot! Cheers to the Chaos!
