Did someone say Welsh champagne? Yes, we did indeed. Ancre Hill, based in Monmouth, Wales consistently produce some absolutely cracking fizz, made from 100% Pinot Noir, grown on their hilly site situated close to the River Wye. Lightly toasted brioche with touches of beeswax, on the palate there's hint of citrus, topped with a refreshing, clean finish.
